* 1 lb. turkey bratwurst or kielbasa sausage
* 1 lb. can sauerkraut
* 1 small jar applesauce
* apple juice
* 1 large apple
* 1 large onion
* 2 Tbsp. brown sugar
* cinnamon
1. Drain sauerkraut and wash in a colander with cold water. Squeeze out water.
2. Simmer sauerkraut in a pot with a small jar of applesauce and enough apple juice to steam it.
3. In a sauté pan, brown sliced onion in 2 Tbsp. butter. When browned, sprinkle in brown sugar and raise heat to high until onion is crisp.
4. Add chunks of fresh apple. Lower heat and sauté for a few minutes.
5. Add apples and onions to sauerkraut. Add salt and pepper to taste; sprinkle in cinnamon.
6. Add turkey bratwurst and 1/2 c. boiling water to skillet; simmer, covered for 15 min., turning once.
7. Drain water, fry bratwurst to brown. Place sauerkraut on plates; top with bratwurst.
