Tuscan-style White Bean Soup

What you need:

* 1 c. diced cooked ham
* 1 c. julienned carrots, cut into 1" strips
* 1 small head escarole, chopped, or about 10 c.
* 4 Wyler's® Chicken Bouillon Granules
* 1 jar (24 oz.) Classico® Italian Sausage with Peppers & Onions Pasta Sauce, or 3 c.
* 2 cans (15 oz. ea.) cannellini beans, drained and rinsed
* 1 c. cooked ditalini pasta, optional

What to do:

1. In a large saucepan over medium heat, cook ham, carrots and escarole for 4 to 5 min., or until escarole is lightly wilted, stirring occasionally.
2. Add Bouillon Cubes and 3 c. of water, and bring to a boil. Stir in Pasta Sauce, reduce heat to medium low and simmer for 10 min. Stir in beans and cooked pasta, and simmer for additional 8 to 10 min., or until heated through, stirring occasionally.

* TIP: If preferred, substitute fresh escarole with fresh spinach.

* TIP: If desired, substitute Classico® Italian Sausage with Peppers & Onions Pasta Sauce with Classico® Tomato & Basil Pasta Sauce.
