
Pickled Eggs

1 (16 oz.) jar beets |
1-3/4 c. white vinegar |
1 c. sugar |
1-1/2 Tbsp. whole allspice |
1 cinnamon stick, halved |
8 hard-cooked eggs, peeled |
Directions:
1. Drain beets, reserving juice. Set beets aside for another use. Combine beet juice, vinegar, sugar and spices in medium saucepan. Bring to a boil; stir until sugar is dissolved. Reduce heat and simmer 5 min.
2. Arrange eggs in 1-quart jar with tight fitting lid. Pour hot mixture over eggs. Cover tightly. Allow to cool to room temperature 1 hr. Refrigerate to blend flavors, at least several hours or up to one week.
